话说娘惹糕点是娘惹们必要会做的一道甜点,因为这样才能展现出娘惹的贤惠。所以从前的娘惹们都要呆在家里的厨房里学做娘惹糕点和娘惹菜肴。一来为家族带来颜面二来嫁个好婆家。可是现代的娘惹们都不学做娘惹糕点,因为他们觉得步骤很复杂也难做,可是Kueh Ketayap一点的不复杂,一点也不难做。It is said that Nyonya Kueh are a dessert that Nyonya must know, because only in this way can they show the virtue of Nyonya. Cococnut filling
Coconut floss 200g ~ 椰丝
200g gula melaka ~ 马六甲椰糖
4 pandan leaves ~Pandan 叶
200ml water ~ 水
Pandan flour mixture:-
100g plain flour ~ 面粉
1 tbsp tapioca starch ~薯粉
1 egg ~蛋
1 tbsp sugar ~白糖
1/4 tsp salt ~ 盐
Coconut milk 50ml ~椰浆
Pandan juice 150ml ~Pandan 水
Water 50ml ~ 水
Oil 2 tbsp ~ 油
1. 先把马六甲椰糖炒融化,然后加椰丝进去一起炒到椰糖都被椰丝吸干就可以了。
Stir-fry the gula melaka to melt first, then add shredded coconut and stir-fry until the gula melaka is absorbed by the shredded coconut.
2. 要用平底不粘锅来做皮,煎5分钟就可以拿起来。
To use a flat non-stick pan for the crust, fry for 5 minutes before lifting.
3. 放一片,然后放进炒好的椰丝,之后就可以包。
